It's very odd that I, and even the boys, like this lunch idea. And in fact, I wish I'd known about it when I was pregnant and nauseous. It's very mild but filling and oddly comforting.
What you'll need:red beans, cooked
whole wheat pita bread (as whole grain as possible)
grated cheese (whatever kind you like, I used cheddar)
mayo
picante sauce or salsa or hot sauce
salt and pepper to taste
I soaked and cooked a batch of red beans in the slow cooker.... Soaked them overnight on warm, then changed the water out and cooked them on high until tender. It was ready just in time for lunch. They can be refrigerated for up to 5 days after cooking them. If you've already refrigerated your beans you'll want to reheat them.
Spread a little mayo inside your pitas, then the hot sauce. Sprinkle salt and pepper on beans if desired. A little salt goes a long way in the taste of the beans. They are naturally bland. Then cram the cheese and beans in there. Heat just until the cheese melts. Toasting it under the broiler is our favorite, but risky. I have a tendency to burn things under the broiler... too many distractions.
The boys loved it, and it was much healthier than a trip to Wendy's. (Not that I do that anymore.)
