Another hit

This is one of the recipes that is a little more involved in prep, but is worth it. It was a huge hit. The recipe calls for chicken, but I didn't have enough. I had extra hamburger so I put it in and it turned out really good with the combo.

Navajo Tacos

1 16oz can refried beans
1/4 cup water
2 cups chicken broth
1/3 cup flour
1/2 cup butter
1 4oz can diced green chilies
1 10oz can diced tomatoes with chilies
10 flour tortillas, torn
2 cups cheddar cheese, shredded
4 cups boneless chicken breast, chopped and cooked (can substitute with ground beef, or combination)

Heat refried beans and mix with water until spreadable paste, set aside. In saucepan combine broth and flour. Add butter, chilies, and tomatoes. Cook until sauce is thick and bubbly. In a 13x9x2 baking pan repeat layers: tortillas, refried beans, cheese, chicken, sauce. Cover, label, and freeze.

Label: Thaw, bake 350 for 1 hour. Uncover, top with cheese, bake 5 mins.
