Steve's Lasagna

Most of my family already has my brother Steve's version of Lasagna. It's the best lasagna I've ever had. After his, all other lasagna tastes pretty blah. This can be frozen, but has better results if you cook it first, then freeze and reheat. So for another shared, Aidan & Jacen approved freezer meal:

Steve's Lasagna

2 lbs extra lean ground beef
2 32oz jars Prego Spaghetti Sauce w/mushrooms
1 Tbl italian seasoning
1 tsp instant minced garlic
3 Tbl parsley flakes
1 16oz carton low fat cottage cheese
1 lb box wide lasagna noodles
1/2 onion, finely chopped
1 1/2 lbs colby or cheddar or monterey jack cheese
1 1/4 lbs pepper jack cheese

Brown and drain hamburger. Stir in spaghetti sauce, italian seasoning, & garlic. Simmer on low heat for 45 mins, stirring occasionally. Toss grated cheeses together. Mix cottage cheese and parsley flakes together. Cook noodles in boiling water approx 5 mins, until noodles are limp but not done. Drain and cool in cold water to prevent sticking. Coat bottom of 12x15x2 1/2 pan with 3 ladles of sauce. Then, repeating 4 times: layer 1/4 noodles, 1/4 cottage cheese, 1/4 grated cheeses. Pat down. Top with remaining sauce and parmesan cheese. Bake at 350 for 30 mins.

Cut into smaller portions and freeze in containers meant for freezing and reheating, or food saver bags. Thaw & reheat. If using food saver bags, can boil to reheat.

This recipe is large enough we can feed our family one night, and freeze the rest for 3 more dinners later.

I love all of the recipes your posting, I cannot wait to try them I hope your doing ok, I know you try and block things or manage just to move on from the situation- it still sucks! I think about you often and hope your doing well. Take care and Happy Holidays!!
